Pre-heat oven to 375˚ F. Line ½ sheet baking sheet with parchment paper or aluminum foil for easy clean up. Spread chips in single layer across the bottom of the baking sheet. Sprinkle haf of the BBQ pulled pork evenly across chips. Top with half of the cheese. Create a second layer -- with chips, pulled pork, and cheese. Bake for 10 minutes or until cheese is melted.
Remove from the oven, sprinkle top with more cheese (optional), tomatoes, avocado, and sour cream.
Notes
I don't recommend re-reheating this meal because the chips get much too soggy. Don't worry -- there won't be any left!
