Ingredients
1cupblueberries
2tablespoonmaple syrup
2teaspoonfresh squeezed lemon juice
Instructions
In a small saucepan on medium-low, simmer blueberries, lemon juice, and maple syrup for 8-9 minutes. Once blueberries are bubbly and start to break up with the back of a spoon, take off heat and let them sit for a few minutes to thicken.
Serve with pancakes, waffles, yogurt*, granola*, etc.
Notes
Store in an airtight container in the refrigerator for 5 days. *If using for yogurt or granola, I prefer my compote to be thicker. Add only 1 tablespoon of maple syrup and simmer for 5-10 minutes longer then take off the heat. The recipe (as written above) is perfect for pancakes where you'd want some of the maple syrup to be loose.
