Ingredients
5-6small tomatillos, husked removed and washed
3garlic cloves
1jalapeno, stemmed, cut lengthwise, and seeded*
½white onion, roughly chopped
juice from half a lime
1cupcilantro
½teaspoonsalt
Instructions
Place jalapeno, tomatillos, and garlic on a sheet pan. Broil* for 12-14 minutes until the skin of tomatoes get a char. Let cool for 30 minutes then peel off skins.
Combine tomatillos, jalapeno, garlic, cilantro, lime juice, and salt and process on high in a food processor for 1 minute or 2 until well combined. Enjoy!
Notes
*Make sure baking sheet is about one inch from the broiler. You want it pretty close in order to get a char. Storage: Store in an airtight container in the fridge. The salsa will stay fresh for 4-5 days. Freeze: You can also freeze this salsa. Place the salsa in the refrigerator the night before you're going to use it.
