1cupfresh-squeezed lemon juice*seeds removed, pulp can stay
Instructions
Combine 1 cup water and 1 cup sugar in a small saucepan. Place over medium-low heat and stir until sugar is dissolved to make a simple syrup. Remove from heat and set aside, allow to cool for 10 minutes.
Meanwhile, remove skin and seeds from two peaches. Coarsely chop the peach into smaller chunks. Place peaches in a blender to be pureed until there are no more chunks (about 1 minute).
Pour the fresh-squeezed lemon juice* into a pitcher. Add simple syrup. Add the pureed peaches. Add remaining 5 cups of water and stir well.
Pour over ice and serve, or move to refrigerator and allow to chill several hours before serving.
Notes
*1 cup of lemon juice typically comes from 5-6 lemons (depending on how juicy they are)Storing the peach puree: You can make the peach puree in advance, if necessary. Add 1 Tablespoon of additional lemon juice so the color stays as vibrant orange as possible.
