Ingredients
1poundpulled pork*cooked
1cupwhite rice
1large sweet potatoin ½" cubes
2cupscornfrozen
1canblack beansdrained
2cupscherry tomatoes
1cuppickled onions**

1cupfavorite jarred BBQ sauceheated
Instructions
Preheat oven to 375ËšF. Line a baking sheet with parchment paper. Set aside.
Follow package directions to make rice from 1 cup of uncooked rice. Typically this requires 2 cups of water to be boiled with the rice, then covered. Reduced heat to a simmer for 15 minutes. Remove rice from heat and let stand for 15 minutes before fluffing with a fork.
Place sweet potatoes cubes on lined parchment paper. Drizzle with olive oil and salt. Roast for approximately 25 minutes or until lightly crispy.
While sweet potatoes and rice cook, heat up corn, pulled pork, and BBQ sauce in microwave, gather pickled onions, slice avocado, halve cherry tomatoes, and gather cilantro and black beans.
Make your bowl: Add bed of rice to the bottom of a bowl, layer with pulled pork drizzled with your favorite BBQ sauce, and all the other "fixins" you like.
