    Leftover BBQ Pulled Pork Bowl

    Elevate leftovers with a delicious pulled pork bowl with rice, avocado, corn, pickled onions, tomatoes, sweet potatoes, and black beans, all smothered in your favorite BBQ sauce.

    My kids love bowls for dinner because they don't just get a couple of things on their plate. They get about 6 or 7 different things on their plate, which is enough to spice up their 8 and 10 year old lives. I love bowls because they eat more vegetables than they otherwise would and everyone can customize to their liking. Bowls are also the perfect way to make a meal stretch for two nights without having to eat the same exact thing twice. I make my favorite Dutch Oven Pulled Pork and either make BBQ pulled pork sandwiches or Pulled Pork Nachos the first night. With the leftovers, I make this bowl two nights later. The kids don't even consider this leftovers. That's a real win!

    This pulled pork bowl has tender pulled pork with your favorite BBQ sauce and so many delicious "fixins" as we say in the South: fluffy white rice, spicy pickled onions, corn, avocado, tomatoes, black beans, sweet potato, and cilantro.

    What to Put in a Pulled Pork Bowl

    To make a pulled pork bowl, you'll need the following ingredients, or a version of them. As I mentioned, bowls are so fabulous because they're meant to be customizable.

    Ingredients needed to make a pulled pork bowl, including pulled pork, sweet potatoes, rice, BBQ sauce, tomatoes, avocado, cilantro, black beans, and pickled onions.
    • cooked pulled pork - My favorite pulled pork recipe is so very simple and so very yummy. I highly recommend you make this recipe!
    • white rice - Feel free to sub wild rice or quinoa for healthier grains.
    • sweet potatoes - Is there anything better than sweet potatoes? I don't really think so.
    • corn - I use frozen corn so I don't have to boil corn on the cob and then cut the kernels off.
    • cherry tomatoes - Fresh produce abounds in these bowls!
    • black beans - The stuff that comes out of the can. Ain't nobody got time to make them from their dried state. You don't typically see black beans with BBQ sauce, but I like the combination and also like the additional punch of protein.
    • pickled onions - My favorite pickled onions I could eat by the spoonful. They are so easy to make (see the note below about making them in advance).
    • avocado - When avocados are good, they are sooooooo good.
    • cilantro - I love a splash of cilantro to freshen the whole bowl up.
    • favorite BBQ sauce - Use whatever you have on hand. Our personal favorite is Bone Suckin' Sauce.

    Meals to Pair with The Pulled Pork Rice Bowl to Ease Prep Time

    When I'm planning my meals for the week, I always think about what ingredients from one meal can overlap with another meal. This way, I'm not starting my meal prep from scratch every single night. That becomes tedious and annoying.

    • Make the pulled pork in advance - I love serving the pulled pork with BBQ pulled pork sliders or
    • Make the rice in advance - Double the normal amount of white rice and use it for delicious pineapple chicken or healthy coconut curry chicken for one night and this bowl the next.
    • Make pickled onions in advance - There are so many delicious things to use pickled onions for -- on eggs, on sandwiches, on easy fish tacos. You'll be able to use them for so many things if they aren't eaten.

    Make It Quicker

    In a pinch for time? Consider the following hacks to get your pulled pork rice bowls on the table even faster!

    • Buy pre-cut sweet potatoes - Our grocery store sells these in the refrigerated produce section. It saves a few minutes of your time, especailly on those nights when you know you just don't have the energy.
    • Use microwaveable rice - In a hurry? These packets of rice you put in the microwave with the side off are lifesavers.
    • Use your favorite BBQ sauce - While homemade BBQ sauce is truly wonderful, use your favorite jarred or bottled BBQ sauce and save yourself time.

    Storage

    Depending on when you've made the pork, the pork will stay fresh for 3-4 days. Package any leftovers in separate containers to maximize freshness.

    Ingredients

    • 1 pound pulled pork* cooked
    • 1 cup white rice
    • 1 large sweet potato in ½" cubes
    • 2 cups corn frozen
    • 1 can black beans drained
    • 2 cups cherry tomatoes
    • 1 cup pickled onions**
    • 2 avocado sliced
    • cilantro chopped
    • 1 cup favorite jarred BBQ sauce heated

    Instructions

    • Preheat oven to 375˚F. Line a baking sheet with parchment paper. Set aside.
    • Follow package directions to make rice from 1 cup of uncooked rice. Typically this requires 2 cups of water to be boiled with the rice, then covered. Reduced heat to a simmer for 15 minutes. Remove rice from heat and let stand for 15 minutes before fluffing with a fork.
    • Place sweet potatoes cubes on lined parchment paper. Drizzle with olive oil and salt. Roast for approximately 25 minutes or until lightly crispy.
    • While sweet potatoes and rice cook, heat up corn, pulled pork, and BBQ sauce in microwave, gather pickled onions, slice avocado, halve cherry tomatoes, and gather cilantro and black beans.
    • Make your bowl: Add bed of rice to the bottom of a bowl, layer with pulled pork drizzled with your favorite BBQ sauce, and all the other "fixins" you like.
