    Summa summa summatime is UPON US! I'm not exactly sure where the months of May and June went this year because I feel like I haven't sat down since last fall, but here we are. The kids are either home annoying each other and us or at various camps, and we're trying to embrace all of the good summer produce and have a bit of time to kick back and actually relax for once with spring sports being over.

    This spicy pickled onions recipe is just one of my favorites and screams summertime to me. I don't really care for pickled vegetables aside from onions, but these zesty little gems sure elevate your sandwiches, salads, tacos, and more.

    So grab your apron, put "Summertime Magic" on repeat, and let's dive into this summertime delight of pickling onions.

    Why Make Spicy Pickled Onions?

    If you're wondering why you should embark on this five minute pickling adventure, here are a few reasons to convince you:

    2. Easy peasy. The longer the onions sit in the vinegar, the better, but it doesn't take more than 5 minutes of labor.

    Ingredients Needed

    You'll need to gather the following ingredients:

    • red onions
    • white vinegar
    • water
    • granulated cane sugar
    • hot pepper spice blend (see more below)
    • salt

    For the hot pepper spice blend, my husband swears by Flatiron Pepper Company's Four Pepper Blend. This one is a combination of dried arbol, habanero, ghost pepper, and jalapeno peppers. Any dried hot pepper blend will work.

    You can also include fresh hot peppers. You'll just need to include twice as much. Don't forget to include the seeds of the fresh hot peppers if you want it extra spicy.

    How to Make Pickled Onions with Some Heat

    First, thinly slice the red onions using a mandolin or sharp knife. Divide onions between 2 16 oz. jars.

    Second, heat the vinegar, water, sugar, dried hot pepper blend, and salt in a medium saucepan over medium heat. Stir until the sugar and salt dissolves, about 1 minute. Turn off the heat and let cool until the water mixture is at room temperature (typically about 20 minutes).

    Finally, pour mixture over the onions so they are covered. Place in the refrigerator for at least an hour, although overnight is ideal. The pickled onions are ready to eat when they are bright pink! Ain't they purdy?

    Storage Instructions

    Proper storage ensures that your spicy pickled onions stay fresh and delicious for as long as possible. Here's how to store them:

    • Transfer the pickled onions, along with the brine, into airtight containers or jars. I like 16 oz. standard mason jars.
    • Store the containers in the refrigerator to maintain their vibrant color, texture, and flavor.
    • Spicy pickled onions can be enjoyed for about two weeks if stored properly. However, the spicy flavor may intensify over time...so be warned!

    • Customize the Heat: Adjust the amount of hot pepper spice blend to suit your taste preferences. Feel free to experiment with different spice levels and blends to create your signature pickled onions.
    • Embrace the Pickling Time: While an hour will do in a pinch, giving the pickled onions an overnight rest will allow the flavors to meld and develop, resulting in a more vibrant and delicious final product.

    Notes

    *Use any dried hot pepper blend. We use Flatiron Co.'s pepper blend but there are a million out there. Feel free to also use fresh hot peppers. You'll just need to use twice as much. Also, keep in mind the seeds will make it extra spciy!
    Storing: Store in an airtight container in the refrigerator with the onions fully submerged in the vinegar. Onions will keep in the refrigerator for up to two weeks.
    Note: The spiciness will intensify the longer the onions sit in the hot peppers, so be warned!
