    Roast Beef Sliders on Hawaiian rolls involve tender roast beef, melty mozzarella, and sautéed bell peppers, making them the perfect appetizer or weeknight dinner. What's not to love?!

    The Super Bowl is upon us -- and instead of talking about football, so much of the talk revolves around Taylor Swift. It's a little annoying, to be honest. I can't quite put my finger on what annoys me so much about T. Swift. I think it's the fake innocence? Like she's trapped as a teen herself and can do no wrong? I also don't think she's a particularly great songwriter, but I understand that she has an extremely large fanbase of obsessed, mostly white, angsty teens and adults. I'm totally here for Usher at the halftime show though. Clearly me and my fellow elder millennials are the target audience now. My how things have changed!

    Now that I've gotten that off my chest, let's talk Super Bowl food. Is there anything more party food worthy than meaty, cheesy sliders?

    These roast beef sliders couldn't be easier, and they're made on Hawaiian rolls. King's Hawaiian sweet rolls are one of my kids' favorite breads. The Hawaiian rolls are pillowy soft and sweet. They go with so many things, including layers of roast beef, melty cheese, and sautéed bell peppers. It's almost like a Philly cheesesteak...except no Cheez Whiz here.

    Why You Need This Sliders Recipe

    They're easy. These roast beef sliders on Hawaiian rolls will take you about 10 minutes of prep time, mostly to sauté the bell peppers.

    They're inexpensive. The roast beef is the most expensive thing on the sandwich, but it's important you buy good quality meat. It'll make the sandwich taste that much better.

    Feeds a crowd. Need to make something for a crowd? These roast beef sliders on Hawaiian rolls can easily be doubled or tripled to feed quite a number of people.

    Eat them for an appetizer, lunch, or dinner. Breakfast might be cutting it here, but these sliders are delicious most any time of day for any occasion.

    Ingredients You'll Need

    You'll need the following ingredients to make the Roast Beef Sliders on Hawaiian Rolls:

    • olive oil - to sauté the peppers.
    • variety of bell peppers - You choose your favorite colors. I used green, yellow, and orange in these.
    • Hawaiian rolls - We use King's Hawaiian rolls. Is there even another kind of Hawaiian roll that exists?
    • Dijon mustard - You could also use horseradish if you want an extra kick instead.
    • roast beef - I get my roast beef thiny sliced from the deli at Whole Foods. It's a nice change of pace from ham and turkey if you're in a rut!
    • mozzarella cheese - I use pre-sliced mozzarella from the deli.
    • unsalted butter - this is for the top of the Hawaiian rolls to make them toasty and golden brown.
    • everything bagel seasoning - added flavor. Don't skip this!

    How to Make Roast Beef Sliders on Hawaiian Rolls

    Step 1: Sauté the bell peppers.

    Sauté peppers in a little bit of olive oil over medium heat until tender. The peppers can sauté while you get everything else together. Feel free to add salt and pepper, too.

    Just be sure to stir every now and then. I cut my peppers a little wider than I wanted to. Cut your peppers smaller so they're easier to cut and eat.

    Step 2: Fill the Sandwiches.

    Slice the Hawaiian rolls length-wise and spread a generous amount of Dijon mustard all over. Place the roast beef on top. I like to do ribbons of the roast beef as opposed to it just being flat. The sandwiches seem more substantial that way.

    Continue layering with the sliced mozzarella and sautéed peppers. Then place the tops of the Hawaiian rolls back on.

    Step 4: Brush and Bake

    Brush the Hawaiian rolls with melted butter. Top with everything bagel seasoning for added flavor. Bake uncovered until the cheese is melty (about 15-20 minutes). Cut into individual sandwiches and enjoy!

    Variations

    These roast beef sliders are HIGHLY customizable, so don't feel the need to have to use this recipe as is. There are a million types of sliders you can make. Make it your own with your favorites or whatever you have on hand.

    • Change the meat. If you have extra ham on hand (like after Thanksgiving or Christmas, especially), use that! These sandwiches are delicious with cold cuts or pulled chicken or pulled pork.
    • Change the vegetable. If you don't love bell peppers, try another vegetable like onions or thin cut squash. You could also bake the sliders open-faced (without the tops) and pile on mustard greens, micro greens, or watercress when they're fresh out of the oven. You'd just need to bake the tops separately to get that beautiful golden color.
    • Change the cheese. I love Havarti with turkey or Swiss or cheddar cheese with ham.

    Some of my favorite combos include pastrami and provolone, turkey and havarti, pulled pork with caramelized onions, and ham and cheddar.

    Make Ahead Tips

    • Consider sautéing the bell peppers ahead of time. Refrigerate the peppers until you're ready to use.
    • If you're traveling with these sliders, assemble the roast beef sliders and then bake them when you get to your destination so they don't get soggy.

    Ingredients

    • 1 Tablespoon olive oil
    • 1 green bell pepper sliced
    • 1 orange bell pepper sliced
    • 1 yellow bell pepper sliced
    • 1 package Hawaiian rolls
    • ¼ cup Dijon mustard
    • 1 pound roast beef sliced thin
    • 8 slices mozzarella cheese
    • 1 Tablespoon unsalted butter
    • 3 Tablespons everything bagel seasoning

    Instructions

    • Preheat the oven to 350˚F.
    • Heat pan over medium heat with olive oil. Add all three bell peppers and cook until tender and soft. Set aside.
    • Slice Hawaiian rolls length-wise with a serrated knife, setting the top of the rolls aside. On the bottom part of the roll, spread Dijon mustard all over. Then place roast beef on top of Dijon. Then add sliced mozzarella and sliced bell peppers.
    • Place top back on. Melt butter and spread over the top of the rolls. Sprinkle top with everything bagel seasoning.
    • Bake for 15-20 minutes. Remove from the oven. Slice and enjoy!
