This was my dinner tonight while the kids ate frozen dinosaur chicken nuggets. I backed into a concrete pylon going decently fast causing so much damage to the back of my car, so I had a one item limit to my cooking today. 😫😫 (No kids in the car thank God!) Life goes on but @#*%! I feel like an idiot. .

Just posted the recipe to these beauts.  If you’ve never hasselbacked anything, give it a whirl! It makes for a pretty presentation and is so delicious because you have more butternut squash real estate that’s covered in the caramelized rosemary and honey glaze. Plus, there’s something about the sharp knife cutting that helps relieve frustration. 😝

This is the third and final cranberry post. Cranberry week is officially over but it’s ending with some bubbly (the best way to end anything IMHO...especially a long day). I’m on the cranberry train this week, and today’s recipe is this easy, 5-ingredient Cranberry Orange Sauce.  Perfectly tart, balanced with some sweetness, and a hint of citrus. It’s been a crazy few days for our family, and now it’s capped off by C having strep. 😷😷 ‘Tis the season for chaos. ‘Tis also the season for cranberries. Did you know that cranberries are basically a superfood, too because of their high anti-oxidant and nutrient content?  Two cranberry recipes are coming at you soon for your festive, holiday table: cranberry and orange sauce and my mom’s cranberry muffins. Stay tuned!

It was boozy and delicious thanks to the recipe from @sallysbakeblog . Kinda perfect for the coldest of cold days like today! 🥶🥶
Instagram post 2175195331608074441_7014681904 Whatcha know about parsnips? They’re the forgotten root vegetable for most people, but they’re readily available at any grocery store this time of year. They’re sweet like carrots but with a nuttier, earthier taste. I’m a fan, and my 5year old was also a fan when roasted until crispy.  I’m not sure whether he was starving to death and desperate or really loved them because they’re *that* delicious, but these Crispy Roasted Parsnips with Thyme are easy to make and have a shoestring French fry texture that almost makes you think you’re eating a healthy French fry. The only thing I changed was the frosting - I used the same ganache I use in my chocolate bundt cake because I was running out of time before taking the kids to soccer practice and that ganache takes one minute. 🤣 And @kingarthurflour ‘s measure for measure gluten free flour worked out perfectly without any texture issues.  I’m inspired to create more gluten free desserts!

This Orzo Soup with Sausage and Spinach is a mix between a chicken noodle soup and minestrone, and it’s a great, easy meal to whip up for a few cold-weather, dark nights. It’s packed with flavor from the sausage and fresh herbs, and the nutty cannellini beans and orzo give the soup some heartiness and texture.  The recipe’s new on the blog today!

My chocolate dessert of choice for the last few months has been these Dark Chocolate Pots de Creme a la @lediplomatedc style. Creamy, custardy chocolate topped with whipped cream and chocolate nibs (that word!) from @surlatable .  The best part is this dessert can be done in only about 30 minutes. Take dinner for example: If I’m spending a long time on my meat (maybe marinating or searing or otherwise being more fussy), I go easy on the vegetables and do something that doesn’t take a long time to prep or cook...say, roasted asparagus that has olive oil, salt and pepper and goes in the oven for 7 minutes. 🎃

Same philosophy applies with these cookies.  If I’m decorating these cookies with the kids, I’m not going to make sugar cookie dough and frosting from scratch.  It just ain’t gonna happen. These bad boys can be baked in 10 minutes thanks to store bought products and we can move on to the fun part...well, the fun part is actually eating. It’s funny how something that’s just slightly different than their normal dinner routine (I.e., cheese cut like ghosts) can bring so much joy to kids. And I’m all about dat joy.
